What it is: Lever espresso machines are the most tactile, most opinionated, most rewarding way to pull a shot, and almost nobody gets to try one properly. This is your chance. Profitec Pro 800, La Pavoni Professional, Flair 58, and whatever else we can get onto the bench. Pull on all of them, feel the difference in your forearm, and taste what the difference does to the cup. Beginners very much included — a lever is arguably easier to understand than a pump machine, because you can feel exactly what you're doing. But consistently pulling good shots on a lever machine takes a thorough understanding of espresso brewing principles and an intimate control of the mechanics of the lever.
