Service Description
Barista Skills — Professional Hook: For the barista who is now responsible for everyone else's coffee. Who it's for: Head baristas, bar leads, and café managers. The course is built around someone with at least twelve months on the bar, ideally in a role with some managerial responsibility. Barista Skills Intermediate is a firm prerequisite. What you'll do: Three days on the science behind the practice, and on the harder problem of maintaining quality through other people. You'll develop a sophisticated tasting methodology and the language to explain flavour precisely rather than approximately. You'll work through drink ingredients and the techniques that get the most from them, learn a systematic approach to developing brew recipes and structuring a beverage menu, and push milk steaming and latte art to the highest consistent standard. Running through all of it is the management question: how you assess, correct and develop the skills of a team so the tenth cappuccino of the shift matches the first. Logistics Duration: 3 days — SCA minimum 21 hours; Tuck Shop teaches 21–24 hours Level: Professional Prerequisites: SCA Barista Skills Intermediate (required). Introduction to Coffee, Barista Skills Foundation and Brewing Intermediate recommended. Assessment: written exam, 32 minutes, 80% to pass, plus a 95-minute practical exam in four sections.
