Water & Preventive Maintenance — Foundation Hook: The two things that quietly decide whether your equipment survives the year. Who it's for: Café owners, managers, and technically-minded baristas responsible for equipment — and anyone who has been told their machine problem was "a water thing" and had no idea what that meant. No prerequisites at all, so it is an unusually accessible entry point into the technical side of coffee. What you'll do: A long day on the two least glamorous and most consequential subjects in a café. On water: the components and function of common treatment systems, the key water parameters and what they do to your equipment, the SCA's water quality recommendations, and what each treatment method actually changes. You'll measure incoming water yourself to determine its composition, and work through the routine for maintaining a treatment system. On maintenance: identifying the wear components in a traditional espresso machine, a batch brewer and a grinder, understanding what a preventive maintenance programme is for, assembling the tools and supplies it needs, and performing the basic maintenance steps on each machine. This is the course that turns unplanned repairs into scheduled ones. Logistics Duration: 1 long day — SCA minimum 9 hours; Tuck Shop teaches 9 hours Level: SCA Coffee Technicians Program, Foundation Prerequisites: none Assessment: 30-question written exam, 32 minutes, 70% to pass, plus a 60-minute practical exam at 70%.
